Pesto Broccoli Grilled Cheese Bagels

Prep Time: 5 minutes - Cooking Time: 5 minutes

Spread 1 teaspoon of basil pesto onto the bottom half of the bagels, then top them with 1 tablespoon of sun-dried tomatoes each. Place the leftover broccoli on top, followed by a slice of cheese and the top half of each bagel.

Melt a little vegan butter in a non-stick pan with a lid and place each bagel onto the hot pan. Close with the lid and cook for 30 seconds, then open the lid and press the bagel down with a spatula before flipping. Cook, with the lid closed, on each side until golden. If the cheese isn't melting quickly add 1-2 tablespoons of water into the pan and close the lid immediately - the steaming water will help to melt the cheese. Serve your pesto grilled cheese bagels!

2 seeded bagels, sliced
2 tsp Zest Vegan Coriander & Basil Pesto
a handful of leftover pesto broccoli
2 slices of vegan cheese
2 tbsp sun-dried tomatoes
1-2 tsp vegan butter (optional)
