Yau's Zum is an all-purpose salad dressing, dipping sauce and marinade that's used in a great many Vietnamese and Thai dishes to add depth and enhance flavour.

Apple cider vinegar and fish sauce are the two main ingredients and the flavours they produce are balanced with freshly chopped garlic and chillies. The result is a flavour that goes as well with salads as it does with spring rolls, summer rolls, fish dishes, soups and stir-frys.
