So why did we call it Wild WestWell we started out on the west coast of the Outer Hebrides, and, well it can get pretty wild out there. As is the way up here in the Highlands, we like natural and high quality stuff only, so that's what goes into our jerky. The end resultTender and tasty beef jerky which is high in protein. Why do we use silverside of beefFor our jerky we view the silverside as a premium cut from the hind quarter which has a consistent quality across all herds. The nature of the muscle fibres makes it ideal for absorbing our tasty jerky marinade.
