Walnut Butter Chicken Satay Marinade ¼ C lemongrass, ¼ yellow onion, 4 cloves garlic, 1 t sriracha, 1 T ginger, ½ t turmeric, 2 T coriander, 1 T cumin, ¼ c soy sauce, 2 T fish sauce, C brown sugar, 2 T vegetable oil, 2 lbs chicken breast, cubed, Walnut Sauce, 1 C walnut butter, C soy sauce, 3 cloves garlic, 2 T sesame oil, 1" fresh ginger, 1 t sriracha, 2 limes, zested & juiced Directions: Soak wooden skewers in water before cooking. Add all the marinade ingredients other than chicken in a food processor and puree until smooth. Add chicken pieces and marinade anywhere from 30 min to overnight. Thread each piece of chicken onto a skewer, grill on high for 2-3 min per side. To make sauce, puree all ingredients together in a food processor until smooth. Garnish with sesame seeds and chopped cilantro. | Wellnut Butter Pad Thai You'll need: 8 oz rice noodles, 3 T cooking oil, 3 cloves garlic, 8 oz of protein of choice (shrimp, tofu, or chicken are all great), 2 eggs,1 bell pepper, 3 green onions, 1/2 cup chopped walnuts, toasted, 2 limes, 1/2 C cilantro Sauce: 3 T fish sauce, 1 T soy sauce, 4 T brown sugar, 2 T rice vinegar, 1 T Sriracha, 2 T walnut butter Directions: Cook noodles according to package. Mix sauce ingredients together and set aside. Heat oil and cook your protein, then add the garlic and pepper. Push to the sides, and scramble the eggs in the middle of the pan until cooked.
