1 lb chicken, sliced
1 can coconut milk
2 tbsp Thai green curry paste
1 cup mixed vegetables (bell peppers, bamboo shoots, and eggplant)
2 tbsp fish sauce
1 tbsp brown sugar
Fresh basil leaves for garnish

Method

1. Rinse 1 cup of Village Pride Rice and combine with 2 cups of water in a pot. Bring to a boil, then simmer covered for 15-20 minutes until tender.

2. Heat coconut milk in a pan, add green curry paste, and stir until fragrant.

3. Add Brown sliced chicken in the curry base.

4. Pour in remaining coconut milk, fish sauce, and brown sugar. Stir well to meld flavors.
