Dane's Perfect Pancakes

15 Minutes

1. Give the eggs, milk and buttermilk a little whisk to blend.
2. Sieve the flour and baking powder and mix this into the egg mixture ensuring all limps are gone.
3. Melt the butter and pour into the mixture, and then add the rice.
4. Ladle a spoonful of the mixture into a hot frying pan, and fry for a couple of minutes on each side.
5. Remove from the pan and serve with your favorite pancake topping.

Chinese Fried Rice

30 Minutes

1. Over a high heat stir fry the garlic, mushrooms, baby corn, carrots, mange tout and chicken in the oil for 5-6 minutes until the chicken is cooked through, and the vegetables are slightly charred.
2. Gently crumble the rice into the pan or wok and continue to cook for 2 minutes or until the rice is piping hot. Add the soy sauce, vinegar and sliced spring onions, mix well.
3. Serve immediately.
