Quick Chicken Madras

30 Minutes

1. Heat oil in a deep non-stick pan with a lid, add the onion and fry for about 3 minutes until tender. Stir in the curry paste and fry for 1 minute.
2. Add the chicken, tomatoes and a splash of water, cover and cook for 15-20 minutes until the chicken is cooked through.
3. Stir in the spinach, when it starts to wilt, mix in the yogurt, coriander, and adjust the seasoning to taste. Do not allow to boil.
4. Heat the VeeTee Basmati Rice according to pack instructions and divide onto warmed servings plates. Spoon the curry onto the rice and serve immediately garnished with the chopped coriander.

Sweet Spiced Rice Pudding

10 Minutes

1. Place all of the ingredients except the rice into a pan and bring to a gentle simmer for 4-5 minutes, stirring constantly until all the sugar has dissolved.
2. Remove the cardamom pods using a slotted spoon. Add the rice to the pan and warm through for 2-3 minutes until hot. Add the milk if you prefer a runnier consistency.
3. To serve, spoon the rice pudding into two bowls and drizzle with double cream.
