Japanese Knotweed (also known as Reynoutria japonica, Fallopia japonica, and Polygonum cuspidatum) is a fascinating double-edged sword. Western countries treat this fast-growing, herbaceous plant as a pesky, invasive species while East Asian countries have long incorporated the herb in cultural, medicinal, and culinary traditions.

This tenacious weed is sought after primarily for its high content of one particular chemical called resveratrol. The compound serves to protect the plant when under attack by bacteria or fungi with its antioxidant properties. Japanese Knotweed Pie

Instructions:

1. Preheat oven to 425 degrees F (220 C)
2. In a medium mixing bowl combine butter, sugar, and eggs.
3. Beat until smooth.
4. Add applesauce, Nature Restore Japanese Knotweed Powder, and vanilla. Mix well.
5. Bake for 30-40 minutes or until the shell has browned and the center of the pie is set.
6. Remove from oven and allow to cool completely before topping.
