Chicken, Bacon & Avocado Sandwich with Special Sauce Ingredients: 4 Slices Udi's Delicious Soft White Sandwich Bread, 2 slices Havarti or provolone cheese, 2 cups rotisserie chicken breast hand pulled, 4 slices bacon cooked, 4-6 slices tomato,1/2 avocado, peeled and thinly sliced, 1/8 small onion, very thinly sliced, 2-4 large green lettuce leave, salt & pepper. For the special sauce: 3/4 Cup mayonnaise, 2 tablespoons sour cream, 1 tablespoon Dijon mustard, 2 teaspoons whole-grain mustard, pinch of salt. Directions: Mix all the ingredients for the special sauce together until smooth. Spread on all slices of Udi's New Delicious Soft White Bread before assembling the sandwich. Layer all the ingredients, except the lettuce, in the order. Season with salt and pepper. Add the lettuce and the top piece of bread. Slice the sandwich in half and enjoy! Makes 2 large sandwiches! | Cinnamon Raisin French Toast Sticks Ingredients: 2 Eggs, 1 cup of almond milk, pinch of salt, 1 teaspoon vanilla extract, dash of cinnamon, 8 slices of Udi's Cinnamon Raisin Bread, Maple syrup. Directions: Heat skillet over medium high heat in a bowl, combine eggs, almond milk, salt, vanilla extract and cinnamon. Slice bread into long, thin slices. Dip into egg mixture and place on hot skillet. After 2 minutes, flip and repeat. Serve with a side of maple syrup. Serves 2. | Gluten Free Blueberry Crumble Ingredients: 6 Cups blueberries, 3 tbsp. corn starch, 1 tbsp. lemon juice, cup gluten free all-purpose flour, ¾ cup gluten free oats, ¾ cup brown sugar, 1 tsp ground cinnamon, 4 ½ tablespoons unsalted butter, ½ cup Udi's Gluten Free Original Granola, 1/2 cup Udi's Gluten Free Snickerdoodle Cookies, crushed. Directions: Preheat the oven to 350 degrees F. Coat an 8 inch round or square pan with nonstick cooking spray. Whisk together the flour, oats, brown sugar and cinnamon in a mixing bowl to make the topping. Melt butter, and pour into the mix. In a separate bowl, combine blueberries with cornstarch and lemon juice. Pour the blueberry mixture into the prepared pan. Cover with topping. Bake for 45 minutes. Remove from oven, and sprinkle granola and snickerdoodle over the top. Let sit for 5-10 minutes then serve with your favorite vanilla ice cream. Enjoy! Serves 4-6 |
