1. Prepare Beef Gravy Mix, set aside and hold warm.

2. Cut potatoes into a medium batonnet and submerge in cool water.

3. Drain completely and fry in small batches at 325°F until soft. Drain on wire rack over a sheet pan.

4. Increase fryer temperature to 375°F. Fry in small batches, until golden brown and crispy.

5. Season with sea salt, drizzle beef gravy mix, and top with cheese curds.
