The Andalusian pastry speciality made from wheat flour, sugar and the best virgin olive oil has been made by hand by Ines Rosales, near Seville for almost 100 years. The tortas are flat slices that are crispy but quite loose. They are available as both a sweet and savoury variant. The Spaniards enjoy the tortas as a dessert, as a small snack in between, as a companion to coffee or tea and fruit. Each individual piece is lovingly wrapped in traditional paper.
