When cooked with sugar, the quince takes on a character all of its own, to create this delightful conserve. All fruit is hand sorted, the implement used to de-core the quinces is called a 'Plonker'. Quince is a most unusual fruit, about the size and shape of a large misshapen pear with yellow fluffy skin. Quince Conserve is made with fruit grown on the Tiptree farm.
