Vegan Cooking

Vegans love aquafaba, the viscous water in which chickpeas have been cooked. It has similar properties to egg whites, and you can use it as an egg substitute.

Due to its ability to mimic the functional properties of egg whites in cooking, aquafaba can be used as a direct replacement for them in some cases, including meringues and marshmallows.

Soups and salads

Toss whole chickpeas onto any salad, soup, or stew.

Spread a layer of chickpeas on a baking sheet. Add your favorite seasonings and roast them until they're golden and crunchy.

Healthy-Pack

Chickpeas, or garbanzo beans, are a type of legume and natural agricultural products. The most common type has a round shape and a beige color.

Chickpeas are high in protein, fiber and make an excellent replacement for meat in vegetarian and vegan diets

Sort and rinse before cooking. Soak chickpeas overnight. Chickpeas double in size when soaked and cooked.
Water should be 3'' above the top of beans.
Cooked chickpeas can store up to 1 week in the refrigerator and up to 6 months in the freezer.

Directions

Blend garbanzo beans, lemon juice, olive oil, garlic, cumin, salt, and tahini in a food processor; stream reserved bean liquid into the mixture as it blends until desired consistency is achieved.

Cook's Note:

End up using about half of the bean liquid, so be sure to reserve it! Also, let the flavors blend several hours or overnight before serving this.
