HONORING OLD WISDOM

Making handcrafted tea has become less common over the years in favor of more modern, mechanized methods. In China, the old style roasting of green tea leaves in a wok over fire has given way to electric woks or industrialized ovens and roasters. Rolling of Oolong tea leaves by hand in Taiwan has given way to mechanical presses that mimic these hand movements. The most sophisticated modern methods can probably be found in Japan, where color sorting of leaves is done by laser-guided machines. Although these methods have allowed more yield for farmers, they are a departure from the art of the leaf.

Our focus is to offer teas that have been made per old-style methods. These approaches vary with the landscape and few remain committed to the raw form of tea spirit. Our work attempts to provide new infusions of energy and channels for traditional skills to be recognized.

The Tao of Tea Organic Red Bush Chai South African Rooibos Tea is a caffeine-free blend of South African Rooibos and uplifting spices. Rooibos (pronounced 'Roy-Boss'), Afrikaans for "Red Bush", is a member of the legume family of plants. It grows exclusively in the Cederberg Mountains and around Clanwilliam in South Africa. The Ancient San Bushmen are believed to be the earliest users of Rooibos. The leaves of the Rooibos bush are harvested, bruised, finely chopped, moistened, and fermented in mounds. The result is a rich flavour and distinct, thin, red-coloured leaves. We hand blend organic Rooibos with organic cloves, cardamom, cinnamon, and spearmint. INGREDIENTS 100 Organic Rooibos Leaves, 100 Organic Cinnamon, 100 Organic Spearmint, 100 Organic Cloves and 100 Organic Cardamom. DIRECTIONS Every tea is different and can be brewed in different ways. The chart below is not a hard-and-fast guide for brewing this tea, but rather a place to get started. Steeping time may vary based on your personal taste or on how many infusions have already been done. Experiment with the brewing of your tea to discover its unique character. To make milk chai, boil leaf in water (around a teaspoon per 8 ounces) for 3 minutes. Add the milk of your choice in ratio of about 1 4 milk to 3 4 water, stir and simmer for another 2 minutes.
