Chicken Coconut Curry

Chicken Coconut Curry

( Prep: 10 Minutes, Cook: 15 Minutes )

Ingredients

• 1 pound Diced Boneless Chicken Breasts or Thighs
• 1 large Onion, cut into quarters
• 2 Tablespoons Thai Style Green Curry Spice Blend
• 2 Tablespoons Olive Oil
• 2 Cups Coconut Milk
• 1 large Potato, cubed

1. Saute 1 large quartered Onion in the 2 Tablespoons Olive Oil & 2 Tablespoons Thai Style Green Curry Spice Blend
2. Add 1 pound diced chicken & saute until brown.
3. Add 1 large cubed Potato & 2 Cups Coconut Milk
4. Bring to a boil and simmer until cooked and potato is tender.
5. Serve with Rice.
