The grapes are crushed and slowly cooked down over a long period of time into a remarkably thick, dense must, which is then mixed with just a little wine vinegar before being allowed to mature in ancient oak barrels. Following this, the natural aroma of chilli is infused into the vinegar to produce a delightfully hot and sweet taste sensation.
