To begin with, the chilli peppers and the garlic are picked from the estates abundant herb gardens and only hours later are added to the olive oil for several days. The garlic is removed first, then a few days the chilli peppers, and then the oil is bottled immediately to seal in the flavour for our customers here in the UK.
