Highly versatile and naturally gluten free, they are made from a paste of rice flour and water that is steamed, formed, cut and then dried. Ideal for soups, salads and stir-fry's, but are most traditionally used in the world's most popular noodle dish, Pad Thai. INGREDIENTS Rice flour (84%), water DIRECTIONS Boil 1 litre of water and remove from the heat. For 2 people, soak 100g noodles in the boiled water for 5-10 mins (or until soft), then drain and rinse.
