Buckeye Brownie Cookies - Gluten Free

A delicious chocolate cookie topped with a layer of peanut butter mixture and melted chocolate drizzle.

Peanut Butter Layer 1/3 cup peanut butter 1 tbsp butter 1/2 cup powdered sugar 1 tsp brown sugar 1/2 tsp vanilla extract

Chocolate Topping 1/2 cup chocolate chips semi-sweet

1. Preheat oven to 350F.
2. Whisk chickpea flour, cocoa powder, baking soda, and salt until well combined.
3. In a separate bowl, cream butter, brown sugar, and cane sugar until creamy. Mix in egg and vanilla extract.
4. Stir in dry ingredients until well combined.
5. Form 7 balls of cookie dough and place on lined baking sheet. Gently press down on cookies until they are 1 inch in thickness.
6. Bake for 12 minutes.

7. While cookies bake, mix peanut butter, butter, powdered sugar, brown sugar, and vanilla until combined.

8. Form 7 balls of peanut butter mixture.

9. Gently press down to flatten each ball until it forms a thin layer and then place one on each cookie.

14. Melt chocolate chips and pour over peanut butter layer. Enjoy!
