Agar Agar is a polysaccharide extracted from red seaweed (Rhodophyceae), Gelidium and Gracilaria. It is a gelling agent, making it a natural vegan substitute for gelatin, and used to thicken and solidify liquids. It is tasteless and odourless, used to create a variety of desserts, sweets, confectionery, and other foods. It is a popular ingredient in Asian cuisine, such as Anmitsu, a Japanese dessert consisting of small cubes of agar jelly. Agar Agar is high in Fibre and a source of Iodine.
