Roasted Brussels Sprouts with Whole Grains and Fruit

Prep: 10 minutes. Cook Time: 20. Total: 30 minutes. Servings: 6.

Ingredients:

3/4 pound Brussels sprouts, trimmed and halved
1/4 teaspoon salt
2 teaspoons light soy sauce
1 package (8.5 ounces) SEEDS OF CHANGE Quinoa & Brown Rice with Garlic
1 tablespoon extra virgin olive oil
1/8 teaspoon pepper
1/4 cup snipped dried apricots
4 slices cooked and crumbled bacon

Directions

Heat oven to 400°F. On large baking sheet, toss Brussels sprouts with olive oil, salt and pepper. Bake 25 to 30 minutes or until tender, stirring halfway through roasting. Meanwhile, heat SEEDS OF CHANGE Quinoa & Brown Rice with Garlic as directed on package; place in serving bowl. Stir in apricots, bacon and roasted Brussels sprouts.

Quick Chicken-Rice Burritos

Prep Time: 10 minutes. Cook Time: 0 minutes. Total Time: 10 minutes Servings: 4.

Ingredients:

1 package (8.5 ounces) SEEDS OF CHANGE Spanish Style Rice
1 Cup Salsa
1/4 to 1/2 cup sour cream
1 cup cut-up cooked chicken
1 cup shredded Cheddar cheese
4 burrito-sized tortillas, warmed as directed on package

Directions

In 10-inch skillet, heat SEEDS OF CHANGE Spanish Style Rice, chicken and salsa over medium-low heat, stirring frequently, until hot. Spread 1 to 2 tablespoons sour cream down center of each tortilla. Place 3/4 cup rice mixture over sour cream; sprinkle with 1/4 cup cheese. Fold top and bottom ends of each tortilla 1 inch over filling; roll sides together tightly.
