Lecithin is a natural emulsifier made of sunflower seeds.It can completely replace soyalecithin.It is used in baked goods to soften dough by increg its volume and developing a fine crust.It is also used to produce margarine, chocolate, sweets, chewing gum, ice cream, cheese and meat products.
