RiceSelect Organic Pearl Couscous

Extremely light and fluffy

Named for its unique shape, pearl couscous (or Israeli couscous) is shaped and rolled into small balls, and then toasted in an open-flame oven. This allows it to absorb liquid without falling apart, distinguishing it from regular couscous and other pasta.

On the Stove:


Step 1 In medium saucepan bring water to a boil. Add couscous, salt and butter (if desired).	Step 2 Cover saucepan and simmer 8-10 minutes.	Step 3 Stir occasionally. Yields approximately 2 cups cooked pearl couscous.

Cranberry Pearl Couscous Salad

Preparation

In saucepan, saute onion in oil until tender. Stire in the couscous; cook and stir until slightly toasted. Cover with the broth; bring to a boil.

Reduce heat and simmer about 10 minutes or until liquid is absorbed. Stir in the cranberries and almonds.

Remove from heat and let stand covered 10 minutes.

Fluff with fork. Season with salt and pepper if desired. Garnish with parsley.

Preparation Time: 15 minutes

Cooking Time: 30 minutes

1 cup, uncooked Organic Pearl Couscous
1/2 cup onion, chopped
2 teaspoons olive oil
1 1/2 cups chicken broth
1/4 cup dried chopped cranberries
1/4 cup dried chopped cranberries
salt and pepper, optional
Fresh parsley for garnish
