A word on chillies & heat

Some of us love chilli but many do not. Many dishes are not supposed to leave your mouth numb, spices are not about how hot it can be, there about complex flavours that tantalise your taste buds and give you a taste explosion without making your eyes water. We dial the heat back so the whole family can eat a meal together. If you like more heat, then adding extra chilli is easy, but you can't take it away.

We are truly passionate about what we do and what goes into our food. We want to show you how to cook restaurant quality dishes the easy way. Spice Masters small batch blends are balanced like they would be in a great restaurant. The mix is the hardest part, and our small batch hand blended spices makes great paella easy to make quickly and easily the same every time. You can view our starter recipe online or watch our cook along video, it’s so easy. Because there’s just spices & herbs, you only need just 1 or 2 teaspoons for a family sized meal of 4 to 6 people depending on taste. If you want to make restaurant quality paella, then you’ll need to source good quality spices like AAA grade Saffron, and then learn how to balance flavours, top chef’s spend years learning to do this. You’ll also need to find a great recipe, showing you the right techniques, it makes so much difference. Many commercial packet mixes normally have fillers and additives, and some do not even have saffron in them. Those fillers are not there for taste, they’re just adding weight.
