The raw materials are produced by the historic company of the Mascolo family which has always been dedicated to agriculture and which has its headquarters in Puglia, a region of southern Italy. Our chickpeas derive from the selection of the ancient Sultano variety grown on the farm. We produce legumes and organic legume flours for a dual purpose: - the first is that legumes go very well with crops without adding chemicals because they enrich the soil with natural nitrogen and increase its fertility which is useful for subsequent crops; - the second purpose is that, in addition to feeding the earth, legumes, thanks to their protein load, also perfectly nourish man. In fact, they are often recommended as substitutes for meat and other products deriving from the animal world. We cultivate the most rustic legumes, obviously not genetically manipulated, which react better to cryptogams (they do not require chemical treatments) and which adapt better to the cultivation environment. Easily cooked after soaking and visual inspection, they express a first-rate flavor and aroma. They can be served in association with pasta, they can be used for soups or to enrich traditional dishes such as couscous. The added value of our products also lies in the fact that they are products that have a significant ethical and environmental value. In fact, in addition to not polluting with chemical products, we try to safeguard the fertility of the soil and safeguard biodiversity by maintaining ancient varieties, certainly less suitable for industrial agriculture, but rich in an invaluable historical and cultural heritage.
