Cardamom plants are forest-dwelling natives of the Indian subcontinent and Indonesia that have been spread for cultivation in a number of tropical countries, including Guatemala, one of the biggest producers of cardamom seeds. Seeds are obtained by drying and separating the fruits. It is added to meals, especially to legumes and fish. It is used as a flavouring in custard, milk desserts, pleasantries, tea and coffee. In Sweden and Finland it is also added to bakery products. Indians chew the seeds to make their breath smell good. Cardamom contains resin, starch and essential oils. It is used as a spice because of its pleasant flavour and smell. Ground cardamom is a genus of 4-5 m tall, large-leaved perennial plants growing in the warm regions. Cardamom fruits are 1-2 cm long, yellowish green and dirty whitish in colour. The seeds are lentil-shaped and lentil-sized, reddish brown in colour and have a pungent odour. Cardamom is a classic ingredient in curries, adding signature sophistication and balancing the richness of other ingredients, it's a lovely, warming spice to use in soups (think homemade lentil, carrot or sweet potato soups, in particular – but don't stop there!), it's superb in stews and hotpots,.
