Coconut Lime Millet Bowl Ingredients: 1 cup Organic Grains Millet, 2 cups water, ¼ tsp. salt 1 cup coconut milk, sweetened 2 limes, 1 tsp. vanilla, a quantity to your liking of toasted coconut. Instructions: In a large, dry saucepan, toast the raw millet over medium heat for 4-5 minutes or until it turns a rich, golden brown and the grains become fragrant. Add the water and salt to the pan and stir. Increase the heat to high and bring the mixture to a boil. Once boiling, decrease the heat to low, cover the pot and let simmer, about 20 minutes. Remove from the heat and let sit, covered for 10 minutes until the rest of the liquid is absorbed. Combine the coconut cream, lime zest and vanilla in a bowl. Fluff the millet and divide among 4 bowls. Pour the coconut mixture over the millet and serve topped with toasted coconut if desired. Enjoy!	Saucy Sausage Pizza Millet Skillet Ingredients for Millet: 1 cups Organic Grains Millet, 2 cups chicken broth, 1/4 tsp. salt, 1 Tbsp. Italian herbs, 1 Tbsp. lemon zest. Ingredients for Sausage Pizza Topping: 2 cups low fat turkey Italian sausage - cooked and crumbled, 2 cups spaghetti sauce, 2 cups low fat mozzarella cheese - shredded, 2 Tbsp. parsley. Instructions for Toppings: Spread sauce over the cooked millet, as you would for pizza. Top with crumbled sausage and mozzarella. Sprinkle with parsley. Return lid to the skillet over low heat and allow cheese to melt, about 5 minutes. Serve warm. Instructions for Millet: Pour millet, chicken broth and salt into a 12-inch-deep skillet with a tight-fitting lid. Cover and let simmer on low heat for 15 to 20 minutes, until most of the water has been absorbed.	Stove Cooked Millet Ingredients: 1 cup Organic Grains Millet, 2 cups water, ¼ tsp. salt. Instructions: In a large, dry saucepan, toast the raw millet over medium heat for 4-5 minutes or until it turns a rich golden brown and the grains become fragrant. Be careful not to let them burn. Add the water and salt to the pan and stir. Bring the liquid to a boil. Increase the heat to high and bring the mixture to a boil. Lower the heat and simmer. Decrease the heat to low, drop in the butter and cover the pot. Simmer until the grains absorb most of the water (they'll continue soaking it up as they sit), about 20 minutes. Remove from Heat and Let Stand: Like most grains, millet needs a little time off the heat to fully absorb the liquid. Allow it to sit, cover, and remove from heat for 10 minutes. Fluff and Serve!
