Recipe: Aloo Mattar

4 potatoes (peeled & cubed), 1 cup frozen green peas, 2 large tomatoes (finely chopped) & 1 onion (minced)
1½" ginger root (minced)
½ tsp. turmeric
2 cups water
2 tsp. Spice Hut Garam Masala & Salt to taste

Recipe: Aloo Mattar

1. Sauté onion and ginger in olive oil until golden brown.

2. Add tomatoes; cook until softened.

3. Add Spice Hut Garam Masala, turmeric, and salt to taste.

4. Cook another 3 - 4 minutes.

5. Add potatoes, peas and 2 cups of water and simmer for 20 minutes.

6. Cover and cook until potatoes are soft, stirring occasionally.

7. Serve hot with rice!
