  • ½ pound dried apples
  • 1 tablespoon chia seeds (ground)
  • 1 teaspoon cinnamon
  • 2 cups apple juice
Ingredients for the crust:
  • 2 cups almond flour
  • ½ cup Medjool dates
  • ½ cup walnuts
  • 1 tablespoon flaxseed (ground)
Instructions:
  • Set the dried apples to soak in apple juice in the morning on the day you plan to cook or the night before.
  • Remove reconstituted apple slices from the juice and squeeze as hard as you can without actually damaging the fruits.
  • Add chia seeds and cinnamon and about 1 tablespoon of the juice and toss to coat all slices in the spicy mix.
  • Process all crust ingredients in a blender and will a springform pan with the sticky mixture. You'll need to press the crust so that it coats the walls of the pan evenly. Use some plastic wrap to help you.
  • Place the apples inside the crust and press gently so that they are packed properly. Remember that the crust is soft at this stage, so don't overdo it.
  • Refrigerate overnight or at least for a few hours and enjoy while it's cool.
