What is Coriander Seed

Coriander, also called cilantro or Chinese parsley, feathery annual plant of the parsley family, parts of which are used as both an herb and a spice. Native to the Mediterranean and Middle East regions, the plant is widely cultivated in many places worldwide for its culinary uses. Its dry fruits and seeds, which are also known as coriander, are used to flavor many foods, particularly sausages, curries, Scandinavian pastries, liqueurs, and confectionery, such as English comfits. Its delicate young leaves, known as cilantro, are widely used in Latin American, Indian, and Chinese dishes. The plant produces a slender hollow stem 30 to 60 mm high with fragrant bipinnate leaves. The small flowers are pink or whitish and are borne in umbel clusters.

Flavors of Coriander seeds:

Unlike bold cilantro, coriander's mellow flavor profile is slightly citrusy with notes of sweetness. Dry-toasting coriander in a pan allows the spice to take on a more robust floral aroma as the oils release from the seeds.

Culinary Uses:

Pleasant, aromatic and spicy, the seeds are used since ancient times in cooking as well medical practices. These seeds are used in curry powder, curries, sausages, pickles, stews and sauces. Sambhar and Rasam - famous South-Indian dishes are incomplete without their main ingredient, coriander seeds. They are mainly used as a flavoring agent in various cuisines. Coriander seeds are also employed in brewing certain varieties of beer, mainly some Belgian white beers.

Oven Fries with Coriander Seeds Ingredients: 2 pounds unpeeled russet potatoes, scrubbed, cut lengthwise into 1/2-inch-thick sticks 2 tablespoons olive oil 1 1/2 teaspoons coriander seeds 1 teaspoon dried thyme, Coarse kosher salt Instructions: Preheat oven to 450°F. Spray large rimmed baking sheet with nonstick spray. Toss potatoes with olive oil, coriander seeds, and thyme in large bowl. Transfer to prepared sheet, spreading in single layer. Sprinkle with salt and pepper. Place in top third of oven and bake until golden, occasionally turning with spatula, about 40 minutes. Season to taste with coarse salt and serve.	Red Cabbage with Coriander Seeds Ingredients: 1 tbsp. olive oil 1 red cabbage, around 900g 1 onion, 1 garlic clove 1½ tbsp. coriander seeds 2 bay leaves, 2 apples 75ml vegan white wine vinegar 50ml maple syrup Instructions: Heat the oil in a large saucepan or casserole dish over a medium heat. Add the cabbage, onion, garlic, coriander seeds and bay leaves, and cook, stirring occasionally, for 15 mins until the cabbage begins to wilt. Stir in the apple, vinegar and maple syrup and season well. Cover the pan and cook gently for 1 hr. until the cabbage is tender and wonderfully sticky and caramelized. Remove the bay leaves before eating. Can be made in advance and frozen or kept chilled for up to two days.	Coriander Cutlets Ingredients: A bunch of coriander leaves 1 cup gram flour, ½ Tsp cumin seeds ½ Tsp. Coriander seeds 1 Tsp chili powder, ½ tsp garam masala, Salt Instructions: Start the process by thoroughly rinsing a bunch of coriander leaves and chop them finely. Now in a plate, take the coriander leave, a cup of gram flour, 1/2 Tsp of cumin seeds, 1 Tsp of chili powder, 1/2 Tsp of garam masala and salt to taste. Blend all the ingredients gently by hand and make it into a dough. Add some more flour if required and give the dough the shape of a roll. Cut the dough into thin slices and shallow fry them. Your coriander cutlets are ready!
