Organic Coconut Palm Sugar by Fenbrook Organic. Sourced from coconut palm trees organically grown in the Indonesia. Packed in the UK. Our organic coconut palm sugar comes from the sap of coconut palm trees, tapped by cutting into the tree's flower-bud. The sap is boiled into a syrup and allowed to dry and crystallize. It's then broken up into granules that look like table sugar and cane sugar. Coconut sugar is an excellent substitute for brown and white sugar in cakes, cookies, desserts, sweet sauces (and sweet sour sauces), drinks and pretty much any other dish or preparation that calls for a sweet touch. Sprinkle a little on pancakes and taste the difference between it and refined sugar, frost cakes and other baked goods with it, or add a teaspoonful to oats or granola for a healthier breakfast boost. Our organic coconut palm sugar has a toasty, caramel-like flavour, similar to that of brown sugar, and it can be used in place of either brown or white sugar in the same measures. Unlike processed table sugar, coconut palm sugar retains a number of the nutrients found in coconut palms, including iron, zinc, calcium and potassium. It also contains polyphenols and antioxidants, and inulin, a fibre that accounts for coconut sugar's glycemic index being lower than that of table sugar, more like the level found in fresh fruit.
