About the Horse Gram

Cooking Method for Horsegram Dal

Soak one cup of horsegram overnight and pressure cook the next morning until mushy. Now blend one onion, two tomato, one large green chilli and a piece of ginger to fine paste. Heat oil, splutter cumin seeds and fennel seeds add a pinch of chilli powder. Now add the blended masala paste and salt.
Saute until oils are released, add the boiled horse gram. Boil until thick and well blended. Add juice of half a lemon and switch off. Serve hot with a dollop of butter or ghee and chopped onions and fresh coriander leaves. This daal called Kulthi daal in North India or kollu paruppu in the South goes well with chappatis and puris.

Cooking Method for Horsegram Rasam (Soup) :

Soak a cup of Horsegram overnight. Pressure cook it the next morning until soft and mushy.
For the Rasam: process one onion, one tomato, one green chilli, one red chilli, ½ cup coconut, curry leaves, haldi and salt. Saute this masala in oil in a thick bottom pan until well blended. Now add the boiled gram with its water to the mix. Boil until correct consistency and set aside.
Temper this rasam with curry leaves, mustard and urad daal seeds spluttered in oil in separate pan. Pour over rasam and serve hot.

Cooking Method for Horsegram Salasd :

Horsegram can be added to salads either as sprouts or cooked whole. To make the sprouts, soak the gram for two days changing water regularly and then hanging it up to dry in a muslin cloth when they germinate. Now add these to salad vegetables like carrots, beans and cabbage. Season the salad with salt, lime juice and pepper powder and olive oil.
Otherwise cook the soaked horse gram in pressure cooker after overnight soaking, drain the water and add to the salad vegetables.
Serve with lunch menu or have it as whole meal.

Ingredients: 1 Cup Little Millet,1 Heaped Cup Idli Rice,1/2 Cup Horse Gram/Kollu/ Kulthi,1 Tbsp Toor Dal,6 - 8 Red Chillies,1.5 Tsp Salt,Oil for making dosa,1 Spring Curry Leaves,Idli Podi to serve with,

Directions: Wash and soak millet, rice, toor dal and horse gram together overnight. Next day morning grind along with salt and red chillies to a fine dosa batter.

Add curry leaves and keep aside for an hour and make dosas.

Serve along with chutney/podi.
