Quick and ready to spoon up, Mr Organic's Grilled Aubergine Add-In Sauce is perfect to use as a pesto, sauce, spread, tapenade – and everything in between. We've grilled a beautiful blend of red and yellow peppers for this sweet and versatile sauce.

Ideal hot or cold in a variety of dishes, it's great for family cooking and easy snacking with crudites, crackers and pasta. We love using it as a delicious alternative for pizza bases, topped with mozzarella and fresh herbs!

Quinoa Stuffed Aubergines by Yana from realitycanvas

Ingedients

3 Courgettes- halved with the middle bit taken out
7-10 Mushrooms- peeled and chopped
2 Cloves of Garlic- very finely chopped
Mr Organic Free From Grilled Aubergine Stir-In Sauce
80g Quinoa- cooked
1 small Red Pepper- finely chopped
Salt, Black Pepper and Parsley to taste

Method

1. In a baking tray place the courgettes, drizzle with some oil of your choice and put under the grill for 10-15 mins till they become slightly softer and browned on the edges.

2. Meanwhile, in a shallow pan cook the chopped mushrooms with finely chopped garlic using preferred oil.

3. Once it's cooked and slightly browned, add it to the cooked quinoa and add the chopped pepper and spices.

4. Take the courgettes out of the oven and add the filling with a generous serving of the aubergine add-in sauce- spread it well.

5. Then add the filling and sprinkle with fresh parsley. There you have it! Enjoy :)
