Marrakesh lemons are not true lemons, but instead are a type of Citrus limetta Risso, or limetta. Distinctive in shape (different from Egyptian lemons)— medium sized, rounded or flattened base on one end, and a depression with a noticeable apex in the middle on the other. The rind is fairly thin and bumpy, and yellow-orange. They undergo a 3 month salting process using sea salt before being sized and jarred by hand in a new brine solution. The Marrakesh lemons can be used whenever a bittering agent is desired for flavoring- they are specifically used to make authentic Moroccan dishes. They are an important, uniquely tasting ingredient. The flavour mixes with the other cooking juices making a delicious sauce.
