Over 65 of Greek honey production comes from conifers, mainly pines. The honey bees with the help of Marchalina Hellenica (a honeydew-producing insect which infests pines) produce the honey. The phenomenon of crystallization is rarely observed in pine honey because it is low in sugars. It's produced in April and from August to November. Pine honey, which is a mixture of sugars and other ingredients, provides to our body with a number of nutrients.
