Origins:

Mekhala (which means "Goddess" in Thai) was born out of the desire for quality, natural products for our own families, while my co-founder and I were mindfully enjoying some relaxing days in contact with nature at her vegan retreat in Chiang Mai, Thailand. As a working mother, I was frustrated with all the artificial additives and preservatives, and the high amounts of sugar in most Asian store-bought products, but did not have the time to cook from scratch. So I roped in my sister (and current Chief Sauceress), Diane, and we got busy. Inspired by the vegan meals at the retreat, we created a range of clean and flavorful products for ourselves and our customers. After all, why can't life be delicious, easy and healthy

We set ourselves to make a difference by contributing to a better life that's easier, healthier, and tastier for all. Mekhala has since grown into a well-loved Singaporean/Thai whole foods brand that produces organic, all-natural, gluten-free, vegan-friendly foods made with only the best ingredients. Based in Singapore, we make our products in our own facility in Chiang Mai, where we source beautiful ingredients from local farmers. We also provide good working conditions and fair practices for women from the marginalised Burmese Shan community to improve their welfare, and we have developed a system that allows us to hire even those who are illiterate .

Vegan Thai Green Curry from Leftover Roasted Vegetables

Ingredients (Serves 1-2 pax): Leftover roasted veggies (in the recipe we have roasted eggplant, carrots, cucumbers, and broccoli) 2 heap teaspoons of Mekhala Organic Thai Green Curry Paste 2 tbsp extra virgin olive oil 200ml Coconut milk Boiled rice Fresh scallion and lime (to garnish) Salt

Method: 1. Heat oil in a wok or saucepan. 2. Add in coconut milk and leftover roasted veggies and stir-fry. 3. Add in a pinch of salt for flavor. 4. Garnish with fresh scallion and a slice of lime. 5. Serve and enjoy!

Green Curry "Meat" Ball

A healthy recipe that's high in protein and requires few ingredients. This only take about 20 minutes to prep and cook! Adjust the amount of Green Curry Paste and coconut milk to your spice preference. Our Organic Green Curry Paste is well spicy and will definitely give this umami packed meatball recipe an awesome kick! Pair with some rice or potatoes!

Ingredients (Serves 2-3)

9 oz (250g) minced chicken or meat alternative

8-10 brown mushrooms, diced finely

1 white onion, diced finely

A pinch of salt

1 egg

1 cup coconut milk

3-4 tbsp Mekhala Organic Green Curry Paste

Method

Combine minced chicken, salt, mushrooms, egg, and onion in a bowl.
Roll about 2 tablespoons of the mixture into meatballs. (Feel free to make smaller or bigger meatballs if you wish)
Bring a pot of water to a boil and boil meatballs for about 5 minutes. It may take longer or quicker depending on their size.
Set aside meatballs when done.
Mix Mekhala Organic Green Curry Paste and coconut milk in a pot and bring to a low boil.
Add in meatballs and simmer for about 3-5 minutes.
Take off heat and serve!
