Recipe - Thai Mango Noodle Salad

Ingredients

1 package rice noodles, cooked and chilled
1 package of Mariani Mangoes, thinly sliced
1 red bell pepper, thinly sliced
1 orange bell pepper, thinly sliced
1 cup red cabbage, thinly sliced
1 pound shrimp, cooked

For the Sauce:

4 tablespoon soy sauce
3 tablespoons cilantro, chopped
1 tablespoon sesame oil juice of
1 lime
2 teaspoons fresh ginger paste
1 teaspoon sugar
1/2 teaspoon fish sauce
1 clove garlic
1/4 teaspoon chili flakes

Directions

1. Place the noodles in a large bowl. Gently fold in Mariani Organic Dried Mangoes, bell peppers, cabbage, and shrimp.

2. In a small bowl, whisk the ingredients for the sauce until they're combined. Toss with the noodles and refrigerate for 30 minutes.

3. Place the noodles on a serving plate and garnish with mint, roasted cashews, and Mariani Organic Dried Mangoes.
