Organic, raw, natural and one of the purest honeys because of the remote area it comes from. This raw organic Forest honey comes from the mountains in the area between Asturias and Leon, a green and unspoilt wilderness area in the north of Spain. This is a very high quality Forest honey, that is very thick. Luisa's Raw Organic Forest Honey has deep, full bodied, slightly smoky, earthy tones, that deliver a more savoury taste than most other honeys. It has an aroma of sticky toffee pudding. Rich main flavour with a very full-bodied and deep taste, similar to a pomegranate molasses. Strong mineral notes with a slightly dry and mostly clean after-taste. Good, thick body. What about the tree the honey comes from? The collective forest trees are known as bosque in Spanish. These can include chestnut (especially) and Mediterranean oak as well as beech and pine. These large trees exude a sweet sap which the bees feed on, sometimes with the help of aphids who live on the tree bark helping the sap to flow out more freely. Some (like Chestnut) also produce strongly-scented blossoms, which the bees love. Common Uses: Forest honey is particularly good to use in recipes such as rich cakes, cookies, desert toppings, ice creams, warm honey teas and meat glazes. This is because of the rich, dark, molasses-like flavour it can lend. Forest Honey Facts: Forest honey contains oligosaccharides, which aid gut health. Please know that raw honey does crystallise and this is a natural process that occurs mainly due to the natural glucose in raw honey. Raw honey naturally crystallises over time. If yours has crystallised and you prefer it runny, place on a radiator and drape a tea towel over it. Leave it overnight (longer if necessary). The heat will not damage the honey, the important thing is that you don't heat the honey beyond 40 degrees (the hive can get this hot in Summer). If the radiators are very hot then put something like a thin book under the jars and then drape a tea towel over them. It can take up to two days to fully liquify. A thick, dark honey high in oligosaccharides, a prebiotic which aids digestion and gut health. Rich, full-bodied and deep-tasting flavour similar to a pomegranate molasses with an aroma of sticky toffee pudding.
