Ingredients for example 5kg batch:

  1. Minced Meat - 4kg
  2. Sausage Mix - 500g
  3. Water (Chilled) - 500ml

Method

  • Add the 500g complete mix to 4kg of mince meat
  • Add 500ml of cold water
  • Mix till combined
  • Fill into Tongmaster Natural or Collagen Casings

For Best Results:

  • Leave the sausage meat to marinade for a few hours or overnight before filling into casings to allow the flavours to infuse.
  • Choose from hog, sheep, collagen or vegetarian casings, or shape into patties!
  • Try rubbing a little vegetable oil on your hands when filling, this makes the casings easier to manage and adds a professional sheen.

Just 4 easy steps to delicious homemade sausages.

Step 1: Measure minced meat, water & seasoning.

Just 3 simple ingredients and 4 simple steps.

  • 800g minced meat
  • 100ml water
  • 100g tongmaster sausage mix

Any meat, with any fat content can be used for this, why not try using low fat meat for a healthier, lighter option!

Step 2: Combine all 3 ingredients.

Mix all ingredients well until fully combined into almost a paste.

  • More water can be added if the mixture feels too firm!
  • Cold water works best.
  • Leave the mixture for a minimum of 2 hours to allow the flavour to infuse, this sometimes makes for better filling.

Step 3: Thread sausages casing of choice on to stuffing nozzle.

Thread the casings gently on to the sausage stuffer nozzle, assuring there are no tears or tangles, tie a knot on the end of the casing to make sure no filling spills out!

Choose between our wide range of natural, collagen or artificial casings, as well as vegetarian, vegan, halal and kosher options.

The image uses our traditional natural hog casing, this is a firm favourite!

Step 4: Fill sausage casings with meat mixture.

Slowly turn the handle of the stuffer while guiding the casings with your hands, rubbing a little vegetable oil on your hands at this point makes this more manageable.

Do not over fill the casings! Make sure you are threading the casing off of the nozzle slowly as the filling comes out, this stops the sausages form bursting or splitting.

Twist the casing to split into sausages, cook as preferred and enjoy!



Fill using a sausage stuffer machine. Leave sausage meat in the fridge overnight to allow the herbs and spices to marinade with the meat. The colder the meat and water, the better the appearance and life of the sausage. Fill the sausage meat into collagen or natural cgs using vegetable oil for a professional sheen. Simply add this seasoning to minced meat & water. Use with beef, chicken, pork, lamb or alternative!. This pack will make 5kg of sausages. Use 500g mix per 4kg minced meat, includes rusk. An old favourite, simple but classic sausage seasoning containing a mixture of herbs to enhance the flavour of any sausage.
