Sugar Cane is now grown on Reunion Island, a tropical paradise of flavours and scents. It is harvested and squeezed from July to December, yielding a delicious liquid that thickens into a syrup before the first crystals form. In the nineteenth century, Reunion Island, then known as Ile Bourbon, was famed for this sweet gold.
