Recipe Idea: Avocado Gazpacho

Prepare the Soup

Cool the prepared Knorr Ultimate Chicken Base.
Place cucumber, garlic, shallots, green pepper, lettuce, dill, vinegar, and lemon juice from 2 lemons and prepared chicken base in a blender or food processor. Blend until smooth.
Cut avocados in half lengthwise. Peel and remove pit. Roughly chop the avocados and add it to the mixture in the blender or food processor. Blend until smooth. Season to taste.

Finish the Soup

Transfer the soup to a medium bowl. Finely chop the remaining avocado and stir this into the gazpacho; add salt and pepper to taste. Chill thoroughly before serving.
Garnish with the remaining dill and 1 tbsp of crème fraiche.

Ingredients:

1 gallon Knorr Ultimate Chicken Base, prepared
3 Cucumbers, seedless, peeled, chopped
5 Garlic Cloves, chopped
5 Shallots, quartered
3 Bell Peppers, green, seeded, chopped
0.5 cups Dill, fresh, chopped
4 oz Red wine vinegar
5 Avocados, Haas
