Ideal for use with sushi rice when blending with akasu and dashi. Kisaichi Ginjo rice vinegar is a kind of rice vinegar with alcohol added using the surface fermentation method. It's good for blending into seasonings, because it has less rice-specific smell and very mild acidity.
