Oh Wow Pancakes (with a Cauliflower Twist) - Grain-Free, Gluten-Free, Low-Calorie Ingredients (4-6 Servings): - 1 ½ cups Iya Foods Cassava Flour
- ½ cup Iya Foods Cauliflower Powder
- 1 cup vanilla yogurt, 2 eggs, 1 cup almond or oat milk (can swap with any milk), 2 Tbsp oil or melted unsalted butter, 2 Tbsp of pure maple syrup, 2 tsp sugar (optional), 2 tsp baking powder, ¼ tsp sea salt, ¼ tsp cinnamon or nutmeg
Instructions: - Mix all the dry ingredients
- Mix all the liquid ingredients and slowly mix in the dry ingredients
- Heat up gridle or pan.
- Pour in griddle and leave for about 3 mins on each side till golden brown(Add some water if too thick or more flour if too runny)
- Serve hot with your favorite toppings, Tip – Follow same recipe for waffles
| So Good Muffins – Grain-Free, Gluten-Free, Low-Calorie Ingredients (4-6 Servings): - 1 cup Iya Foods Cassava Flour
- ½ cup Iya Foods Cauliflower Powder
- ½ cup almond or oat milk (can swap with any milk)
- 2 eggs, ¼ cup sliced almond nuts, 2 tsp baking powder, ¼ tsp baking soda, ½ cup oil, ½ cup pure maple syrup, ¼ cup brown sugar (can use coconut sugar or maple sugar), ½ tsp salt, 1 tsp vanilla extract, 1 cup water
Instructions: - Preheat oven to 350F and line or spray a 12cup muffin pan
- Mix all the dry ingredients in a medium bowl
- In separate bowl mix all the wet ingredients and then gently mix in dry ingredients
- Spoon into muffin tins and let bake for 20-25 mins or until tooth-pick comes out clean. Let cool and enjoy
| OMG Chocolate Cake – Grain-Free, Gluten-Free, Low-Calorie Ingredients: - 2 cups Iya Foods Cassava Flour
- ½ cup Iya Foods Cauliflower Powder
- 1 cup unsweetened cocoa powder, 1 cup maple syrup, 1 cup mayonnaise, ½ cup milk (can also use almond milk), 3 eggs, 2 cups sugar, ¾ cup oil or melted butter, 2 tsp baking soda, 2 tsp vanilla extract, ½ tsp salt, 1 cup hot water, Chocolate Glaze, 6 oz unsweetened chocolate chips, 6 Tbsp unsalted butter
Instructions: - Preheat oven to 350F Grease baking pan and line with parchment paper.
- Wet mix - Combine sugar and oil or butter until smooth then add all wet ingredients except the hot water (this comes last)
- Dry mix - Mix all dry ingredients in separate bowl and then pour in wet mix in until smooth
- Carefully mix in hot water (this is what increases cake moisture). Pour batter into pan and bake in the preheated oven for 30-35 mins or until a toothpick comes out clean
- For Chocolate Glaze, Microwave chocolate chips for a few mins till melted. Next stir in butter till smooth. Allow to cool and glaze cake. Let cool & serve
