The corn has been slow dried and then milled into a pure powder. All batches are tested to make sure they are free of heavy metals and other pollutants. SUGGESTED USE: As a substitute flour, purple corn can be used in a ratio of 1 to 3, with 2 parts other flour. When used in baking, this flour will give a dark purple colour to bread, biscuits and cake. This flour is also neutrally gluten free but is packed in an environment where gluten products are packed. BENEFITS: Purple corn is loaded with anthocyanins which are the antioxidants that are beneficial in fighting free radicals. In fact, purple corn has one of the most powerful of anthocyanins in existence. Purple corn is also high in dietary fibre, vitamin B6 and phosphorus.
