THE UNIQUE PROPERTIES OF MANUKA HONEY - The "IAA" allows you to measure the activity of Manuka honey. The higher the index, the higher the concentration of methylglyoxal, the more active the honey is. Common honey usually show limited activity over time due to the degradation of hydrogen peroxide (oxygenated water) by the body. However, New Zealand scientist Peter Molan discovered an additional activity with Manuka Honey called "Non-Peroxide Activity or NPA".
