Helmos Pine Honey: A rich honey with a special aroma

Organic pine honey is produced by the Souka family in northern Evia. It constitutes 65% of the total honey production in Greece and is derived from the honey secretions of the insect Marchalina hellenica, when it parasitizes on Aleppo and Trachea pine.

Due to the low concentration of sugars, it is not too sweet.

Pine honey is considered to be a honey of high nutritional value, as indicated by its high ash content. This is mainly due to the large number of different substances present in its composition. This is mainly due to the large number of ash substances in Greek pine honey. This is due to the high concentration of minerals and trace elements (calcium, magnesium, zinc, iron, copper, etc.), which are found in high concentrations in Greek pine honey.

Some compare its aroma to the scent of iodine. The colour of pine honey is characteristic and darker than that of thyme. In fact, that produced in spring is lighter and clearer than that produced in autumn.

The crystallisation of pine honey is quite slow, since its natural glucose content is low. In particular, pure pine nuts remain liquid, i.e. without crystallising, for more than one and a half years.
