Chestnut Honey: A Tasteful Journey To The Green Forests!

One of the most widespread trees of mountainous Greece, the chestnut tree, gives us one of the most important types of honey! Chestnut honey is produced by the Souka family on Mountain Kosmas. It is a honey of mixed origin, from the nectar of the flowers and from the honeydew secretions of the chestnut tree.

The aroma of chestnut is strong, woody and special, just like the chestnut tree itself. The taste is strong, peppery, less sweet than we are used to, slightly bitter. In fact, its taste is so strong that a small proportion of chestnut honey is able to mask the taste of any other honey.

It is rich in trace elements such as potassium, magnesium, manganese and barium, as well as fructose and tannins due to the chestnut tree. A high content of pollen grains is found in this honey. The strong presence of pollen increases its nutritional value. It has sweating properties and helps blood circulation. In addition, it has astringent, disinfectant and healing properties particularly useful in the urinary and digestive systems, providing antimicrobial action in the intestine. In addition, it has a high carbohydrate content, mainly fructose, which makes it ideal for athletes.

Chestnut Honey Sauce

A rich poultry sauce made with chestnut honey and roasted chestnuts. This sauce will take the meal to another level as the chestnut honey, with its distinctive flavour, adds character to the sauce!

Instructions:

Score the chestnuts with a paring knife to make an X on the pointed side of each nut and roast them in a pan for 25-30 minutes.

When the chestnuts are cool enough to handle, remove their skin.

To make the chestnut sauce, heat the brandy and the wine. Add the Chestnut Honey, vinegar and chestnuts and cook until the chestnuts are tender, about 10 minutes. Remove the chestnuts so they don't fall apart, then reduce the sauce until only 2 cups remain and add the chestnuts back to the sauce.

Optional: add cold unsalted butter to thicken before serving.

  • 1/4 cup cider vinegar
  • 4 cups chicken stock
  • 1/4 cup brandy
  • 2 cups dry red wine

Helmos Mountain

1500 species of plants cover the slopes of Mount Helmos in the northern Peloponnese. Plane trees, black pine, oaks, willows, maples, poplars and many others, while in total 14 types of ecosystems with rare endemic plants have been recorded. It is a botanical paradise that is perfectly suited to the activity of beekeeping. Greece has excellent environmental and climatic conditions for the growth of numerous wild aromatic plants, which create typical Greek honey qualities that stand out for their clarity, color and rich flavor.

Helmos Chestnut Honey 480 g is produced by beehives amongst the Greek nature (thyme, herbs, carob trees, citrus, conifers, wild blossom). Only the best parts of the pollen are carefully selected, following the strictest production standards. Beehives are kept amongst organic herb cultivations and transferred over a 1000m altitude in summer period to collect what Greek nature offers. It contains no added sugar, no preservatives.
