Longjing, also known by its literal translated name of Dragon Well, is a famous green tea more commonly associated with China, where it originates. Ours however comes from Taipei on the island of Taiwan (Formosa), where they have adopted the traditional Chinese processing techniques to produce a green tea of exceptional quality. The leaves are picked by hand and then pan fried earlier than normal, to stop the oxidation process, then rolled and dried. Due to the lack of oxidation, Longjing tea retains more of its nutritional content, and produces a delicious smooth vegetal flavour, with a light, grassy aroma. Brewing Suggestions: Use 1 tea bag per cup and infuse for 3 - 5 minutes, or to individual taste, using boiled water allowed to cool.
