Carne Asada Breakfast Tacos Recipe Ingredients:500g Rump Steak, 1 tbsp Smoky Chipotle Fajita & Taco Mix, ½ lime (juice), 2 tbsp olive oil, Lemon thyme, Salt and freshly ground coarse black pepper, 2 tbsp butter, 5 free range eggs, Olive oil for cooking, 5 Soft Taco Wraps, 1 jar of Chipotle Salsa, Limes wedges to serve Directions: 1.Place steaks on a chopping board and season with the Smoky Chipotle Fajita & Taco Mix. Add the lime juice, 1 tbsp of olive oil, a few sprigs of lemon thyme and a pinch of salt and black pepper. Rub the steak into all the mixture and set aside. 2.Heat up a frying pan and olive oil, sear steaks . Add the butter at the end and baste. 3.Remove the steaks from the pan and wrap them in tin foil, let them rest for 6-7 minutes before cutting. 4. Fry your eggs with olive oil and a pinch of salt, and set aside. 5.Warm up your Soft Taco Wraps over a hot pan and slice your steak into strips. 6.Serve your wraps topped with the steak strips, a fried egg and Smoky Chipotle Salsa. Enjoy! | Easy Nachos Recipe Ingredients: 1 tbsp olive oil, 100g (3½oz) cooking chorizo (casing removed and roughly chopped), 3 spring onions (finely chopped), Homemade Guacamole, 4 free range eggs, 1 tbsp creme fraiche, 25g (¾oz) butter, 2 flour Burrito Wraps, 1 jar of Chipotle Salsa, Salt and freshly ground black pepper,1 spring onion (as garnish, finely chopped) Directions: 1. Heat olive oil in a frying pan. Add chorizo and the spring onions, and cook for a few minutes until the chorizo is crisp, set aside. 2.Prepare the homemade guacamole 3.Crack the eggs in a bowl, add the creme fraiche, add a pinch of salt, whisk it all together. 4.Heat up a saucepan and add the butter. Pour in the beaten eggs. Heat gently, stirring continuously until the eggs are scrambled to your liking. Season with salt and black pepper. 5.Warm the Burrito Wraps over a hot pan. 6.Assemble the burritos, spread tortillas with the guacamole, then the scrambled egg, top with the fried chorizo. Then add Chipotle Salsa. Roll it up and serve. | Chicken Quesadilla Recipe Ingredients: Half a roast chicken (about 300g/ 10½ oz;), 2tsp Gran Luchito Chipotle Mayo, half a mozzarella ball (or queso Oaxaca if you can get it), handful fresh coriander (roughly chopped), 4 tortillas, Gran Luchito Smoky Chipotle Salsa Directions: 1. Begin by shredding the chicken 2. Heat a frying pan on a medium heat. Once hot, place a tortilla into the pan. 3. Add half of the shredded meat on top of the tortilla, followed by half of the cheese and coriander. 4. Finally, add another tortilla on top. When beginning to brown, use a spatula to carefully flip and remove from pan when cheese is melted. 5. Repeat the steps to make a second quesadilla and keep warm in the oven on low. 6. When ready to serve, remove the top tortilla from each quesadilla and spread the Gran Luchito Chipotle Mayo onto the underside before replacing on top of the filling. 7. Cut the quesadillas into quarters and serve with the Chipotle Salsa. |
