The Fleur de sel is a sea salt that has a special chemical composition, derived from a production process different from that of common sea salt. It is low in sodium and rich in minerals such as potassium and magnesium, which are necessary for a healthy life. It is obtained from the thin layer that forms on the surface of crystallization beds due to its lower density than water, which is collected through a careful manual process. The Fleur de sel is produced exclusively in France, Spain, Portugal and Mexico, since for its elaboration it is necessary to combine a series of natural factors, such as solar energy, air, climate, land relief and the quality of the sea water available. SolySals Colima fleur de sel is harvested only between the months of May and June. To preserve all its qualities, it must be collected during the afternoon, which makes it even more select.
